Chinese I am supposing not Indonesian, Thai, or japenese?
I like this:
beat 2 eggs with chopsticks till just mixed (not frothy like an omelet)
add sugar 1 tsp or sweet rice wine & 2 tsp soy sauce
pour 1/4 cup in small fry pan when somewhat set, take out and stack like pancakes, going until all egg is gone cover with more soysauce.Then cut in thin strips
Meanwhile, take oil and fry small cubes of carrots, onion, snow peas, cabbage, or bok choy, celary, little ginger.
Add cooked white or brown or mix rice (rice sit overnight is better)
Add rice, do not mash, add frozen sweet peas or run them under water
Add more soy sauce, little shrimp if you have or spam or little pork
or chicken
Then mix more, add eggs last.
Add more soy sauce. Note if you have sesame oil add drops to rice.
Salt & pepper to taste
